Pasta Bolognese

Prep time: 10 minutes – Cook time: 15 minutes – Serves: 4 -5

INGREDIENTS

  • 1 bag of pasta of choice (or use “veggie noodles”)
  • 1 lbs. of ground meat – beef, turkey, chicken, tofu, lentils etc.
  • 26- 28 oz can or carton of crushed or strained tomatoes
  • 1 onion, chopped or 1-2 tsp onion powder
  • 3-6 cloves of garlic or
    ½-1 tsp garlic powder
  • 1 squash or zucchini, chopped – optional
  • 1 package of mushrooms about 20 oz. sliced or chopped – optional
  • 1 tsp oregano
  • ½ tsp dried ground sage
  • 1 tsp paprika
  • 1 TBSP olive oil
  • Salt and pepper to taste

METHOD

  1. Prepare pasta according to instructions on package.
  2. Heat large skillet to medium-high, add olive oil. Add onions, stir for a minute or two, add ground beef, or other protein source, and stirring and crumbling until cooked. 
  3. Then add the herbs, salt and pepper, keep stirring.
  4. Add the rest of the veggies and continue to stir for a few minutes. After they are browned a bit, add tomato sauce.
  5. Continue to stir once in a while letting sauce simmer on low for at least 5 minutes.
  6. Serve over cooked pasta and, if you like, add Parmesan cheese.

This is a simple and fast recipes that is LOVED by my family. It contains a few regular ingredients that we all have on hand. You can even leave off all the veggies, or add your favorites.

I love that this is ready from start to finish in under 30 minutes. Contains only healthy ingredients. And I always have these ingredients in my pantry! I am doing a “pantry staples” and “top tips” blog very soon.

  1. I need to try your recipe! I made up my own recipe many years ago and it’s a family favorite in our regular “rotation”. It’s remarkably similar to yours (great minds) but you add a few extra spices. Excited to try it!
